1. Select the appropriate potato
Before processing them into delicious dishes, you should choose the right potatoes according to your cooking creations.
SoBou Restaurant chef Byron Halliburton says some varieties of potatoes are better suited to certain dishes. Potatoes are brown and low in water perfect for making French fries, sauteed potatoes, or baked potatoes.
Meanwhile, potatoes that are redder in color are more suitable for soup, stew, or as a salad because of their high water content.
“There is one potato that is called ‘multipurpose potato’ that is a yellow potato, it can be baked, mashed, or used in soup or salad,” Halliburton said, as quoted. Insider, Wednesday (28/4).
Also, make sure you buy potatoes in good condition. Your potatoes should be clean, soft, skin-free, and without sprouts.
2. Store in cool and dark place
Where the potato is stored is also a concern because it can change the taste Halliburton says potatoes are best stored in a cool, dark, well-ventilated environment. However, you should not store it in the refrigerator as it can change the taste.
“At refrigerator temperatures, potato starch starts turning into sugar, which can change its taste and affect your recipe,” he says.
Plus, it’s best to process your potatoes in less than a week. When stored under ideal conditions, potatoes can indeed last for several weeks. However, the best time to use it is within a week after you buy it.
If you can’t use all the potatoes in time, store them in the freezer. Freeze it by chopping it to your liking, chopping it lengthwise, or cubing it. Frozen potatoes can last up to a year in the freezer.
3. Store the peeled potatoes in water
To prevent the potatoes from turning brown, store the peeled potatoes in cold water until they are ready to cut. Peeled potatoes oxidize easily and can turn brown if left for a long time.
The chef at the Culinary Education Institute, Palak Patel said, you can store it in cold water while preparing the cooking ingredients you need. After all the ingredients are ready on your kitchen table, then process the potatoes.
